Dolby Digital EX 6.1

They announced EX some time ago. Dolby Digital Surround EX is not a 6.1 system, it doesn't have seven discrete channels, it is a 3/3:2.01 system, with Centre Surround being matrix encoded into Surround Left and Surround Right.

No, not exactly because it's simply Dolby Digital delivering additional information which is fully backwards compatible. All that will be required is a suitable decoder, probably a THX design to extract the additional channel.

: I'm building a new home theater, so I would like to know if I have to installed the center rear channel for future use with this new format.

Yes, if I were you I'd put a Centre Surround loudspeaker in place. If you have a choice, install a bi-pole which will provide the best of both worlds both in terms of directly radiated sound and a slight diffusion.
