It really depends on the quality of the DACs you're going to use and the analogue stages associated with them. By using the Tos-Link output of your player, you're using the DACs and analogue stage in your receiver which may be superior, judging by the results you're hearing from the Panasonic DVD.

Another thing to bear in mind, many modern receivers/processor convert the analogue inputs to digital for internal processing, then back again so that you can listen to the outputs. Therefore you have an extra level of processing, the A/D conversion. It's usually best to avoid that if you can.
