Do Interconnect Cables make a big difference?

Yes, makes a big difference. I recently did the same thing and upgraded all my cables to Monster Cable, a low priced version (Audio 2?). The difference in sound from my CD was like night and day. Bass was much better defined and highs were no where near as harsh. I also used the Monster sub cable, $60 for 25ft (?). I would highly recommend spending some money on quality cabling. I understand Monster is considered low end in this world so you can start there and go up! Good Luck! BTW, I think I ended up around $250 total to recable my whole system. I'm very pleased.
