B&W Nautilus 804 vs. ????

There are many fine speakers out there. I suggest you take your time and audition as many different brands as you can.

I would especially recommend Dynaudio. Their Contour 1.3 bookshelves ($2500/pr) are gorgeous (Dynaudio make the drivers for a number of different high-end speaker companies). Their soft dome tweeter is smooth like the B&Ws, and they are among the best imaging speakers anywhere. An even better value is their Audience 50 ($899/pr) which come surprisingly close in sound quality, though you give up the beautiful wood finish. You could put together a very nice system with Contour fronts/Center and Audience surrounds. The only limitation is they need power--in a room your size, I'd recommend 200 wpc amplification.

Other speakers worth considering are Hales, Vienna Acoustics, Tannoy, and of course B&W 600 Series Two, which inherited some of the designs from the Nautilus.

Feel free to mix and match subs--there is no requirement to get a sub from the same manufacturer as the mains.
