What does "S/PDIF" stand for?

No you dont, S-video is needed for VIDEO-Outputs only. Like when you would have a video-card with TV-out, that you would like to connect to your TV-set.

But you should always have some S-video in and outputs on your Receiver though, for connecting your DVD-player, and other stuff that requires Video-through...
