If I read you right, you're trying to hook up your DD cable box to your receiver? I might be out to lunch here, so get a second opinion. If it is only a single RCA-type connector, then it is probably an AC-3 coaxial connector. You connect this to any digital coax input on your receiver EXCEPT an AC-3 RF input. AC-3 RF is particular to laserdisc since that was the accepted standard for formatting the AC-3 signal.
If you are trying to connect a normal AC-3 coax to an AC-3 RF dedicated input, I have not heard of a converter for this.

If your cable box has only two RCA-type connectors clearly labeled stereo output (or L/R, whatever) then it sounds like the AC-3 decoder is built in to the cable box and is down-mixing the signals to 2-channel stereo. In this case you have lost the discrete channels of AC-3 and the best you can do is use the stereo outputs on a pro-logic decoder. This sounds hokey to me, so maybe if you can list the model of the cable box, someone else who has one can answer your question.
