1-The remote; learning or not?- Yes (but has a limited number of memory)
Around ten or so button memories.
2-The remote; Subwoofer level control?
Not that I know of.

3-On screen display; Is it easy to use? -Pretty Much. Takes a bit to figure it out but after that you'll be fine. There are TWO basic drill-down areas on the on-screen remote. The first is the set-up (config) of the speakers, (large small ),delay, inputs and the like, and the second is the surround parameters. This second set-up, after you've pretty much configured your system as you want it, will be where you will be going to most. This has the Dyn Range Compression and the Cinema EQ.
Also, you can EASILY change the db levels of EACH speaker (non- 5.1 mode) Quickly by using the remote and the PANEL display of the receiver (you don't go through the on-screen display part). It's nice and quick. Also, "Personal Memory Plus" is really good too. This remembers the settings for each input device you use. I.E (for me) VHS uses the 5 channel stereo with different db levels for each speaker. The receiver retains the last settings for that input! That's pretty cool.

4-Cinema RE-EQ; Does it have it? YES

5-Midnight mode; Does it have it? It has Dynamic Compression ( 4 levels (low, mod, med, high I believe or something like that) that will work like a midnite mode. It works pretty well.

I have the AVR-95 (which is quite similar to the AVR-2700 but I believe lacks the burr-brown dacs).
I'm really happy with it.

If you wire everything through your receiver (Video and audio), you can pop up the on-screen menu on top of the image you are watching. You cannot interchange composite and s-video signals on the fly. I fed the video out of the VCR to the TV directly (and therefore I cannot use the on screen for that input). You would need a s-video to composite adaptor (C2S tributaries) to seamlessly change input from your remote (there are other configs I believe as well).

Good Luck.
