I asked Theta, and here is the response:

We use many 56009's, which are 24 bit processors. 2 on the processor/D-A
board, 1 for DTS, 1 for AC-1, one for Circle, one for spatializer.

Not bad... the fact that they are all on cards is very cool, IMO, too :)
